You’re welcome! Actually, if you’re buying grass-fed (biodynamic) meat, feel free to go for the fattiest cuts. If it’s grain-fed (factory farm) meat, then go for the leanest cuts. The nutrients and toxins get stored and concentrated in the fat. So in a healthy animal, the fat is full of nutrients; in an unhealthy animal, the fat is full of toxins. In other words, grass-fed bacon rules :P
